Fancy dinners are amazing – but definitely not common with a. a student’s budget and b. compatible with a 40 hour school week. 

Since being on the elimination diet, I’ve learned that sometimes less is better. So voila, baked asparagus with goat cheese, olive oil, and sprinkled with sea salt and pepper; and baked salmon with lemon juice, olive oil, and pepper. 

It was quite delicious, if I do say so myself.
