…craving sushi like crazy, it’s about time that you learn how to make it yourself!
I stopped by Loblaws and picked up the necessary ingredients:
– 2 seaweed sheets
– 1/2 cup sticky rice (follow directions on the package)
– 2 tbsp rice vinegar (add 2 tbsp to rice while cooking)
– 1/8 sliced and cooked sweet potato (cook in oven along with shrimp)
– 1 avocado
– 6 pieces coconut shrimp (follow directions on the box)
– a bamboo mat
– soy sauce
Roll out your bamboo mat, and lay down a seaweed sheet, on one end of the sheet place sliced avocado, cooked sweet potato, and coconut shrimp on top.
Take half of the cooked rice, and spread it out on the seaweed sheet, leaving a small free space on the opposite end (to the avocado, sweet potato, and coconut shrimp*). Wet your palm with cold water, and flatten it out over the rice.
*You’ll need 3 coconut shrimp per roll, so cut the tail off one of the shrimp to stick in the middle
Using the bamboo mat, roll the avocado, sweet potato, and coconut shrimp end over, at which point you can use your fingers to finish rolling.
Squeeze the roll with the bamboo mat, to securely close the roll.
Using a sharp, wet knife, slice the roll into pieces!
This recipe should make 2 full sushi rolls.
I don’t know which version of sushi this is – probably a modified dragon roll, but it’s incredibly delicious. I still need to pick up that orangey stuff that usually goes on top (can you tell that I’m still a novice?)
