fast food: scrambled egg tortilla


Now that school’s out for summer – I can get back to eating right and exercising again (so exciting)! This morning I slept in (amazing) and after convincing myself to leave the warm cocoon known as my bed, I made a delicious and healthy breakfast. 
– 1 tortilla (I used a gluten-free tortilla)
– 1 egg
– 2 tbsp salsa
– 1/2 ripe avocado
– 2 tbsp of grated cheddar old cheddar cheese


Heat up your tortilla. In the meantime, scramble your eggs on the stovetop. Once they’re done, put them on one half of the tortilla. Layer the grated cheddar cheese, salsa, and avocado on top of the egg. Fold the tortilla, and toast in a conventional oven (if you wish).
